Is the barista or the bean more important to you?
This makes a great coffee? Do you think it's more about the beans – not swear by the 'organic varieties of fashion or to the major labels familiar taste the best for you? Or is it the person making the coffee? Is your double espresso made by a barista in winning the coolest cafe in town, or is prepared by the Italian guy at the corner coffee shop on the road?
I was a Barista for a majority of my professional life. I fired rounds of service at Starbucks, working at a mom-n-Pop and an organic restaurant in fashion. I think your question points to the answer, a good Barista readings of their customers and give them what they want consistently. If you indulge me, I want to break all the coffee drinkers into three categories: Relationshippers, Snobs and Italians. Relationshippers. For these customers, interaction with the Barista is why they return. For these clients, I will: having no interest in sport, I'll read the sports page daily in order to have a common interest in the sport regularly enjoy. – When a woman has a fantasy of Mrs. Robinson, I was called to make this fantasy for him to take a platonic date. – Once I made espresso to wake up a regular customer. Snobs. These people want their beverages made to their precise specifications. They may know little about coffee, but I'll repeat them drink until they are happy. A good barista never makes their customers feel dumb, I'll read what you want and get there. Italians. It was an honor and a privilege to serve these people. They have an understanding of the barista / customer relationship. They press against the bar, spend 5 min. striking the Barista on some shades the human condition, then leave. They do not want to have sex with you, they do not want their ego massaged, just fired a shot well, talk a little then their party.
