How to make a good coffee?
I have tried many coffee makers, Mellita, Proctor Silex, Hamilton Beach and a few brands that I do remember. I bought all kinds of beans and ground coffee first, tried tap and bottled water. I had a roommate from college making coffee and dynamite he was cooking the beans first making a lot of smoke. I really know how he did it because he I was spoiled. Everything else tastes like crap, even (especially) from Starbucks.
Your room mate must have been roasting. He evidently received the unroasted beans – green. This is key because the coffee becomes stale much more rapidly than people realize. There are several web shops where you can buy green beans. Burmancoffee.com. Sweetmarias.com and many other years. Google 'coffee'. You can buy a roaster, although will Coast a little money or simply get a corn popper hot air. I use a knee Presto. I cut a small screen of hardware cloth to keep the beans to breathe. You have to stand there and shake but it gives you an excellent roast. There is lot of smoke comes from roast. As for the coffee machine is, most of them are quite cheap and the water hits the grounds to temperature too low. It should be about 195 to 200 F. You can check with a thermometer. Mr Coffee seems to work well. I love use a French press at times and just dump boiling water into it. Boil water highlights the tannic acid, but sometimes it I like it. Finally, the mill made a difference. Most mills in stores are the type of wheel. A Burr grinder is preferred because it provides a uniform grind – the same size particles. If you looked at the grounds from a mill wheel under the microscope it would look like rocks and dirt with all other sizes in between. Burr grinders are expensive. I have a big old from a grocery store (A & P) I managed to scrounge. It was free. Probably way more than you wanted to know, but heck, you asked.
